Meatless Mondays!

I don’t know about you all, but I LOVE Sundays. I get to wake up, grab some coffee, go on a run, go to the farmers market, and most importantly, spend a night cooking with my sister and watching great shows on the cooking channel.

 

Last night’s meal was so good that I have to share it!

 

My twin sister is just as much of a food enthusiast as I am, and it is a pleasure to cook with her. She has a love for cooking and adds finesse to her foods that I hope to have one day.

 

This dish is from a recipe we saw made on one of Cooking Channel’s new shows, He Cooks, She Cooks. (It’s a clever shows about a married couple that are both chefs.) It’s a beautiful dish that showcases vegetables in all their beauty.

 

 

Why is the title Meatless Monday?

 

If you have looked at many websites lately from Self Magazine to NY Times, Mondays have been named Meatless Mondays to encourage people to cook their dinner sans meat to help the environment as well as their health.

 

We made this Potato-Tomato Gratin as our main meal, but instead of using heavy whipping cream, you can use half and half or 2% milk to cut down on saturated fat. We also did not use Gruyere cheese; we cubed mozzarella (part-skim) and sprinkled it on top for more flavor and fewer calories. We plated a portion while hot onto some salad greens (a great one would be arugula) and enjoyed our nightly feast.

 

Try this recipe tonight or any night! It will be a true table pleaser.
